Green Chicken Curry

Serves 4. Ready in 35 mins.

Ingredients

  •  300g chicken breast

  • 1 cup broccoli

  • 1 cup zucchini

  • 1 carrot

  • 2 teaspoons paprika

  • 1 teaspoon chilli flakes

  • 1 tablespoon green curry paste

  • 400ml coconut milk

  • 1 teaspoon olive oil

Method

1. Dice chicken, add to pan on medium heat with olive oil to brown.

2. Add paprika, chilli flakes and curry paste, mix well.

3. Add and combine coconut milk to pan.

4. Dice broccoli, zucchini, capsicum and carrot. Add to the pan and mix well.

5. Reduce heat to low and let mixture simmer for 20 minutes.

6. Serve with brown or cauliflower rice.


Notes

  • Simmer on low for up to an hour to increase flavour.

  • Add extra vegetables such as red capsicum, snow peas, beans or bok choy.

  • To reduce spice factor, don’t add chilli flakes.
