Microwave Omelette

Serves 1. Ready in 5 minutes.

Ingredients

  • 2 eggs

  • 2 tablespoons milk (your choice!)

  • 1 slice cheese

  • 3 roma tomatoes

  • ¼ cup spinach

  • 1 slice ham

  • Salt and pepper to taste

Method

1. Whisk eggs and milk in a microwave friendly bowl.

2. Dice tomatoes, spinach, cheese and ham then add to the bowl with salt and pepper. Whisk again until well combined.

3. Cook in the microwave uncovered on high for 1.5 minutes.  Remove to check then return to the microwave for a further 30 seconds if needed then serve.


Notes:

  • Choose any milk that suits you!

  • For extra veggies try adding red capsicum and corn.

  • For vegetarian take out the ham.
