Grilled Greens Bowl

Serves 1 as a main, 2 as a side. Ready in 15 mins.

Ingredients

  • 2 cups diced green vegetables (your choice!)

  • 2 tablespoons feta

  • 2 tablespoons flaked almonds

  • 1 teaspoon chilli flakes (optional)

  • 2 teaspoons olive oil

Method

1. Heat olive oil in a pan or wok on medium heat. Add green vegetables and chilli to the pan to stir fry for 10 minutes, stirring regularly.

2. Serve into a bowl, sprinkle with feta and almonds.


Notes

  • Choose any green vegetables at all.

  • Serve on spinach for extra green.

  • To serve as a bigger main, try serving with brown or cauliflower rice.
