Lasagne

Serves 8. Ready in 1.5 hours.

Ingredients

  • 500g beef mince

  • 1 cup spinach

  • 400g canned tomatoes

  • 200g tomato paste

  • 1/2 cup red wine

  • 2 teaspoons onion infused olive oil

  • 2 teaspoons paprika

  • 2 teaspoons oregano

  • 1 teaspoon parsley

  • 1 teaspoon tumeric

  • 250g lasagne sheets

  • ½ cup grated cheese

White sauce

  • 500g cottage cheese

  • 1/2 cup sour cream

Method 

1. Preheat oven to 180 degrees. Spray baking dish with olive oil.

2. Heat olive oil in a pan on medium heat. Add beef mince, season with oregano, paprika, tumeric and parsley. Brown mince stirring regularly.

3. Add spinach, canned tomatoes and tomato paste to the pan, mix well and simmer for approx. ten minutes. Pour in wine to the pan, mix well and simmer for a further twenty minutes, stirring as needed.

4. While the sauce simmers, mix cottage cheese and sour cream together in a bowl.

5. Spread one third of the pasta sauce over the base of the baking dish. Top with one third of the white sauce and arrange lasagne sheets over the top. Repeat again until the last layer of white sauce at the top. Sprinkle with grated cheese. Bake in preheated oven for 40 minutes or until cheese is melted and golden brown. Remove from the oven and set aside for at least 10 minutes before slicing into 8 portions.


Notes

  • Mince can be beef, plant based or turkey

  • Freeze in individual containers and reheat for lunches!
