Pumpkin and Feta Pizza

Serves 1. Ready in 30 mins.

Ingredients

  • 1 wrap

  • 2 teaspoons tomato paste

  • 4 slices pumpkin (approx 1/4 cup)

  • 10 spinach leaves, diced

  • 4 slices tomato

  • 1 tablespoon feta

  • 1 teaspoon parsley

  • ½ teaspoon chilli flakes

  • ¼ cup grated cheese

Method 

1. Preheat oven to 180 degrees. Line a baking tray with baking paper and spray with olive oil.

2. Place wrap on baking tray. Spread tomato paste over the wrap and sprinkle with parsley and chilli.

3. Place pumpkin, tomato, spinach and feta on the wrap base evenly. Sprinkle grated cheese over the top.

4. Bake for 30 minutes or until potato is soft and top is golden. Slice then serve.
