No Rice Risotto

Serves 2. Ready in 20 mins

Ingredients

  • 100g bacon

  • 3 cups spinach

  • 1 ½ cups broccoli, grated

  • 1 ½ cups cauliflower, grated

  • 1 zucchini, grated

  • ½ cup cottage cheese

  • ¼ cup sour cream

  • 4 slices haloumi cheese, diced

  • 3 tablespoons flaked or chopped almonds

  • 1 teaspoon chilli flakes

  • 1 teaspoon parsley

  • 1 teaspoon paprika

  • 2 teaspoons garlic infused olive oil

Method 

1. Add olive oil to a pan on medium heat. Dice bacon and add to the pan to lightly brown. Add broccoli, cauliflower, zucchini and haloumi to the pan. Sprinkle with chilli flakes, parsley and paprika and continuously mix well.

2. Add cottage cheese and sour cream to the pan and again mix well into the mixture. Simmer for 10-15 minutes, stirring regularly.

3. Add spinach into the pan and stir through the mixture until slightly wilted down. Sprinkle with almonds, mix well again then serve.
