Chilli Con Carne

Serves 4. Ready in 40 mins

Ingredients

  • 500g mince

  • 400g canned tomatoes

  • 140g tomato paste

  • ½ cup grated broccoli

  • ½ cup finely diced red capsicum

  • 2 tablespoons chilli flakes

  • 1 fresh diced chilli (optional)

  • 1 tablespoon paprika

  • 2 teaspoons onion/garlic infused olive oil


  • Sour cream, to serve

  • Brown rice, to serve

Method 

1. Heat olive oil in a pan on medium heat. Add mince to the pan, season with paprika and chilli flakes, and brown.

2. Add finely diced red capsicum, grated broccoli, diced chilli, canned tomatoes and tomato paste to the pan, mix and stir as needed. Cover the pan, reduce the heat to low and let simmer up to 30 minutes stirring as needed.

3. Serve into a bowl with brown rice and add a teaspoon of sour cream.


Notes

Use your preferred mince meat - beef, turkey, chicken and plant based all work!
