Oat Cookies

Makes 12. Ready in 45 minutes.

Ingredients

  • 2 ripe bananas

  • 2 cups rolled oats

  • ½ cup shredded coconut

  • ¼ cup rice malt syrup

  • ¼ cup olive oil

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

 

Method

1. Pre heat oven to 160 degrees. Line baking tray with baking paper and prepare with olive oil.

2.  Mash bananas in a bowl with a fork. Add all other ingredients to the bowl and mix until the mixtures binds.

3. Roll the mixture into 12 round balls then place on the baking tray well space apart. Flatted slightly with a fork.

4. Bake on 160 degrees for 35 minutes, until golden and set on the outside. Take out of oven and cool.


Notes

  • Try serving with a layer of Greek yoghurt on top and a few sliced strawberries.
