Raspberry Energy Ball

Makes 12. Ready in 30 mins.

Ingredients

  • ½ cup raspberries

  • ½ cup rolled oats

  • 1 cup + 2 tablespoons shredded coconut

  • 2 tablespoons almonds

  • 2 tablespoons cacao powder

  • 1 teaspoon rice malt syrup

 

Method

1. Blend almonds and oats in a food processor until fine.

2. Add all other ingredients (minus 2 tablespoons of shredded coconut) into the food processor and blend until well combined.

3. Sprinkle 2 tablespoons of shredded coconut over a chopping board or bench. Roll the mixture into 12 small balls then roll in shredded coconut.

4. Place on a tray then place tray in the freezer for 25 minutes.

5. Transfer to a container then store in the freezer.


Notes

  • Rice malt syrup can be swapped for honey.

  • Take straight from the freezer to eat on a hot day for a cool snack, otherwise take out and let thaw for 5 mins before eating.

  • Add a teaspon of psyllium husk for extra fibre if needed.
