Pink Oats

Serves 1. Ready in 10 minutes.

Ingredients

  • ¼ cup rolled oats

  • ½ cup milk (your choice!)

  • ¼ cup raspberries

  • 1 tablespoon blueberries

  • 1 tablespoon chia seeds

  • 1 tablespoon flaked almonds

  • 1 tablespoon Greek yoghurt

  • 1 teaspoon shredded coconut


Method

1. In a microwave friendly bowl add oats, milk, raspberries and blueberries. Lightly mash the blueberries and raspberries then combine well.

2. Cook in the microwave on high for 1 minute. Take out and stir then return to the microwave on a high for a further 1.5 minutes. Repeat for a further minute if needed.

3. Take from the microwave and sprinkle with chia seeds, flaked almonds and shredded coconut.

4. Add and stir the Greek yoghurt through the oats then serve.


Notes

  • To make creamier, try cooking on the stove top.

  • Add a teaspoon of LSA to increase protein and healthy fat content.

  • Top with sliced banana to add more fibre and an extra serve of fruit.
