Pumpkin and Feta Salad
Serves 2 as a main, 4 as a side. Ready in 40 mins.
Ingredients
2 cups spinach
1 cup pumpkin
1 avocado
½ cup cucumber
¼ cup feta
¼ cup pepitas
1 tablespoon + 1 teaspoon olive oil
Method
1. Preheat oven to 180 degrees. Dice pumpkin into very small pieces and place in a baking dish. Drizzle with olive oil and place in oven to roast for 35 mins.
2. In a serving bowl add spinach, pepitas and olive oil and mix well. Dice cucumber and avocado and add to the bowl.
3. Take pumpkin from the oven and let cool for 5 minutes.
4. Add pumpkin to the bowl and toss salad. Crumble feta over the top and serve.
Notes
Serve with source of protein if having as a side such as grilled chicken, steak, salmon or tofu.
