Smashed Potatoes

Serves 4 as a side. Ready in 55 minutes.

Ingredients

  • 4 potatoes

  • 8 roma tomatoes

  • 1 cup spinach

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Method 

1. Preheat oven to 180 degrees. Drizzle olive oil over the base of a baking dish.

2. Slice potatoes in half, place in baking tray and roll in olive oil. Roast in the oven for 30 minutes.

3. Take from oven and place on surface. Flip the potatoes and then with a potato masher or fork, press down on each potato half firmly to almost flatten the potatoes. Add tomatoes around the potatoes and return to the oven for a further 20 minutes.

4. Take from oven and serve on a spinach.


Notes

  • Try swapping potatoes for sweet potatoes!
