Pumpkin Lasagne

Serves 4. Ready in 1 hour.

Ingredients

  • 3 cups pumpkin

  • 1 cup spinach

  • 250g lasagne sheets

  • 500g cottage cheese

  • ½ cup grated cheese

  • 1 tablespoon olive oil

  • 2 teaspoons chilli

  • 1 teaspoon parsley

  • Salt and pepper to taste

 

Method

1. Preheat oven to 180 degrees. Prepare a baking dish with olive oil.

2. Dice pumpkin and add to a pot with water to cover and place on medium heat to boil.

3. Grate zucchini and broccoli and set aside.

4. Once pumpkin is soft, drain water and add chilli, parsley, salt, pepper and olive oil to the pot. Mash together well.

5. In the prepared baking dish, lay down a row of lasagne sheets, followed by a layer of cottage cheese, followed by a layer of spinach leaves, followed by a layer of pumpkin mash. Repeat.

6. Top with grated cheese and add to the oven. Bake for approx. 40 minutes.


Notes

  • Make into “orange lasagne” for kids by removing chilli and spinach, adding extra cheese to the pumpkin mash.

  • Increase vegetable intake by adding grated broccoli to the pumpkin mash.
