Veggie Rice Bake

Serves 4 as a side. Ready in 35 minutes.

Ingredients

  • 1 cup grated cauliflower

  • 1 cup grated broccoli

  • ½ cup grated zucchini

  • ½ cup cottage cheese

  • ¼ cup milk

  • 1 tablespoon sour cream

  • ¼ cup grated cheese

  • 2 tablespoons crushed almonds

  • 1 teaspoon paprika

  • 1 teaspoon parsley

  • 1 teaspoon olive oil

  • Salt and pepper to taste


Method 

1. Preheat the oven to 180 degrees. Grease a small to medium baking dish with olive oil.

2. Place all ingredients except grated cheese in a bowl and combine well. Add to the prepared baking dish and sprinkle with grated cheese.

3. Bake for 30 mins until golden on top. Take from oven and serve.
