Warm Beef Salad
Serves 2. Ready in 30 minutes.
Ingredients
200g beef, diced
1 ½ cup spinach
½ cup corn kernels
½ cup pumpkin, diced
½ cup cherry tomatoes
½ cup avocado, diced
¼ cup crunchy Asian salad noodles
2 slices haloumi cheese, diced
2 tablespoons crushed peanuts
1 tablespoon lemon juice
1 teaspoon olive oil
1 teaspoon chilli flakes
Method
1. Combine olive oil, lemon juice and chilli flakes in a bowl and add beef, set aside for a minimum of 10 minutes to marinate.
2. Place beef in a pan on medium heat and brown the beef.
3. Add diced pumpkin to the pan and cook for 8-10 minutes stirring regularly until almost soft and golden. Push beef and pumpkin to the side. Add diced haloumi, cherry tomatoes, corn kernels and salad noodles to the pan and cook for 3-5 mins, stirring regularly.
