Baked Capiscums

Serves 4. Ready in 45 mins.

Ingredients

  • 500g mince

  • 4 red capsicums

  • ½ cup broccoli

  • ½ cup cauliflower

  • 1 zucchini

  • ½ cup cottage cheese

  • ½ cup cooked brown rice

  • ¼ cup grated cheese

  • 2 tablespoons sour cream

  • 2 teaspoons crushed almonds

  • 1 teaspoon paprika

  • 1 teaspoon chilli

  • 1 teaspoon parsley

  • 1 teaspoon pepper

  • 2 teaspoon olive oil

Method

1. Pre heat oven to 180 degrees. Line a baking tray with baking paper and 1 teaspoon of olive oil.

2. Slice both capsicums in half, scoop out the seeds and place face down on the baking tray. Bake for 15 minutes.

3. Grate zucchini, broccoli and cauliflower. Heat 1 teaspoon of olive oil in a pan on medium heat, add paprika, chilli, parsley and pepper. Add to the pan mince and brown, followed by the vegetables and brown rice. Combine well and continue to stir as needed for 5 minutes.

4. Add cottage cheese, sour cream and almonds to the pan and mix in well for 5 minutes then remove from heat.

5. Take capsicums from the oven, turn over and stuff with the pan mixture. Sprinkle with grated cheese. Return to the oven for a further 20 minutes then serve.


Notes

  • Swap beef mince for plant based or chicken mince.

  • Double the recipe and freeze for lunch or dinner another day!
