Banana and Peanut Butter Muffins

Makes 12 muffins. Ready in 40 minutes.

Ingredients

  • 2 bananas

  • 2 eggs

  • ½ cup peanut butter

  • ½ cup milk

  • 1 cup rolled oats

  • 1 cup flour

  • 3 tablespoons olive oil

  • 1 tablespoon rice malt syrup

  • 2 teaspoons baking powder

  • 1 teaspoon cinnamon

Method 

1. Preheat oven to 180 degrees. Prepare 2 muffin trays (for 12 muffins) with olive oil or butter.

2. Mash banana in a bowl. Add all other ingredients into the bowl and mix well until combined.

3. Bake for 30 minutes, until cooked through and golden on top. Remove from oven and cool in tray before removing.


Notes

  • Swap peanut butter for any nut butter!

  • Choose any flour, but aim for one with the most nutritional benefit such as whole meal, spelt or buckwheat!
