Tuna Pasta Bake

Serves 4. Ready in 50 minutes.

Ingredients

  • 190g tuna in olive oil (2x 95g cans)

  • 1 zucchini

  • 1 carrot

  • ½ cup frozen corn

  • ½ cup frozen peas

  • ½ cup spinach

  • ½ cup cottage cheese

  • ¼ cup sour cream

  • ½ cup grated cheese

  • 1 cup cooked pasta

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 teaspoon olive oil

  • Olive oil spray

Method 

  1. Preheat oven to 180 degrees. Prepare a baking dish with olive oil spray.

  2. In a bowl, grate zucchini and carrot. Add in peas, corn and tin tuna and mix well.

  3. Add cottage cheese, sour cream, salt and pepper and combine.

  4. Place cooked pasta in prepared baking dish then top with the bowl mixture. Add spinach over the top and combine

  5. Sprinkle with cheese then place in oven to bake for 40 minutes until golden on top.
