Banana Bread

Makes 12 slices. Ready in 1 hour.

Ingredients

  • 4 very ripe bananas

  • 3 cups flour (your choice!)

  • 2 teaspoons baking powder

  • 2 teaspoons cinnamon

  • 1 teaspoon nutmeg

  • 1 teaspoon salt

  • 2 eggs

  • ¼ cup milk (your choice!)

  • ¼ cup olive oil

  • 1 teaspoon vanilla essence

 

Method

1. Pre heat oven to 180 degrees. Line a loaf baking dish with baking paper.

2. Mash bananas in a bowl with a fork. Add eggs and whisk together.

3. Add milk, vanilla essence and olive oil to the mixture and combine well.

4. Combine flour, baking powder, cinnamon, nutmeg and salt to the banana mixture, mixing well.

5. Add mixture to baking dish. Bake on 180 degrees for 40-45 mins, until cooked through and golden on top.


Notes

  • Try sprinkling with almonds for extra flavour.

  • For different variants, try adding half a cup of raspberries/blueberries/coconut/almonds/chocolate chips.

  • Slice once cooled and store in freezer, either in sandwhich bag or tupperware container with baking paper in between if needed.
