Banana Pancakes

Makes 12 pancakes. Ready in 15 minutes.

Ingredients

  • 1 banana

  • 2 eggs

  • 1 teaspoon baking powder

  • 1 teaspoon flour (your choice!)

  • 1 teaspoon olive oil

Method

1. Mash banana in a bowl. Whisk eggs into the banana.

2. Add flour and baking powder to the bowl, combine well.

3. In a pan on low heat, add olive oil.

4. Spoon 2 tablespoons of mixture per pancake into the pan. Cook for 4 minutes on each side or until browned.


Notes

  • Freeze in small batches to use for lunchboxes or snacks another time.

  • Add blueberries for an extra hit of fruit.

  • Coconut flour is not essential and can be swapped for any flour.
