Banana Pancakes
Makes 12 pancakes. Ready in 15 minutes.
Ingredients
1 banana
2 eggs
1 teaspoon baking powder
1 teaspoon flour (your choice!)
1 teaspoon olive oil
Method
1. Mash banana in a bowl. Whisk eggs into the banana.
2. Add flour and baking powder to the bowl, combine well.
3. In a pan on low heat, add olive oil.
4. Spoon 2 tablespoons of mixture per pancake into the pan. Cook for 4 minutes on each side or until browned.
Notes
Freeze in small batches to use for lunchboxes or snacks another time.
Add blueberries for an extra hit of fruit.
Coconut flour is not essential and can be swapped for any flour.
