Haloumi Bowl

Serves 1. Ready in 15 minutes.

Ingredients

  • 1 cup spinach

  • 1 egg

  • 3 slices haloumi cheese

  • ½ cup avocado

  • 2 teaspoons olive oil

 

Method

1. Heat 1 teaspoon of olive oil in a pan on medium heat. Dice haloumi and add to one side of the pan and lightly brown each side. Add the egg to the other side of the pan and cook one side.

2. Add spinach over the top of the haloumi, drizzle with other teaspoon of olive oil and sauté.

3. Combine the haloumi, egg and spinach in the pan then serve in a bowl. Dice the avocado and serve on top.
