Beetroot and Feta Salad

Serves 4 as a side. Ready in 10 minutes.

Ingredients

  • 2 cups spinach

  • 200g beetroot

  • 125g cooked brown rice

  • ¼ cup feta

  • ½ cup flaked almonds

  • 1 teaspoon olive oil

Method 

1. In a serving bowl add spinach and cooked brown rice, then drizzle with olive oil.

2. Dice beetroot and add to the bowl, toss well.

3. Crumble feta over the top followed by flaked almonds then serve.
