Grilled Zucchini and Corn Salad

Serves 4 as a side. Ready in 10 minutes.

Ingredients

  • 250g canned corn kernels

  • 1 zucchini

  • 1 teaspoon coriander

  • 100g piece of feta

  • 1 tablespoon olive oil

Method 

1. Peel zucchini into ribbons, add to a pan on medium heat and drizzle with olive oil.

2. Continue to toss while the zucchini grills.

3. Add corn kernels to the pan and brown for 2-3 minutes, tossing continuously.

4. Serve then crumble feta over the top.
