Bircher Muesli

Makes 10 serves. Ready in 5 hours.

Ingredients

  • 2 cups rolled oats

  • 2 apples

  • 1 ½ cups vanilla Greek yoghurt

  • 1 cup almond milk

  • ½ cup almonds, flaked or crushed

  • ½ cup coconut flakes

  • ¼ cup pepitas

  • 1 teaspoon cinnamon

  • 1 teaspoon nutmeg


Method 

  1. Finely slice or grate apples, add to a bowl or container. Add all other ingredients and combine well.

  2. Cover and refrigerate for a minimum of 5 hours. Serve as is or top with fresh fruit and an optional drizzle of honey.
