Bircher Muesli
Makes 10 serves. Ready in 5 hours.
Ingredients
2 cups rolled oats
2 apples
1 ½ cups vanilla Greek yoghurt
1 cup almond milk
½ cup almonds, flaked or crushed
½ cup coconut flakes
¼ cup pepitas
1 teaspoon cinnamon
1 teaspoon nutmeg
Method
Finely slice or grate apples, add to a bowl or container. Add all other ingredients and combine well.
Cover and refrigerate for a minimum of 5 hours. Serve as is or top with fresh fruit and an optional drizzle of honey.
