Lamb Couscous Salad
Serves 4. Ready in 25 minutes.
Ingredients
4 lamb steaks
1 1/4 cups diced pumpkin
1 cup spinach, sliced thin
1 1/2 cups uncooked pearl couscous
1/2 cup crushed or flaked almonds
50g feta piece
1/4 cup olive oil + 2 teaspoons
Salt and pepper to taste
Method
In an oven bake dish or air-fryer, add diced pumpkin mixed with 1 teaspoon olive oil and cook until roasted then set aside.
Add pearl couscous to a saucepan and cook according to packet instructions using the absorption method then set aside.
Add 1 teaspoon of olive oil to pan on medium-high heat. Add lamb steaks to the pan, season with salt and pepper, and cook to taste. Remove from heat and let rest for 5-10 minutes then slice thin.
In a serving bowl add cooked couscous, roasted pumpkin, sliced spinach, sliced lamb and almonds. Crumble feta over the top and dress with olive oil. Toss all ingredients together well then serve.
