Cacao Peanut Butter Slice
Makes 12. Ready in 45 minutes.
Ingredients
2 cups natural puffed rice
½ cup shredded coconut
½ cup coconut oil
¼ cup honey
¼ cup cacao powder
1/4 cup peanut butter
Method
1. Line a baking dish with baking paper.
2. Combine in a bowl natural puffed rice, shredded coconut and cacao powder.
3. Add coconut oil to a microwave safe bowl, add to microwave on high for 45 seconds until melted. Add to the bowl and combine well.
4. Add honey and peanut butter to bowl, mix well.
5. Spoon mixture to the baking dish, stirring continuously to keep from setting.
6. Place in the fridge for one hour. Cut into slices then store in an air tight container.
Notes
Swap honey for rice malt syrup to make fodmap friendly.
Swap raw cacao for cocoa to make sweeter.
Can be made into traditional crackles in cupcake wrappers instead of slice, making the perfect kids party food (you may need to take out the peanut butter though!)
