Cheats Chicken Risotto
Serves 4. Ready in 20 minutes.
Ingredients
300g chicken breast
1 cup cauliflower, grated
1 cup broccoli, grated
1 zucchini, grated
1 cup spinach
½ cup cottage cheese
¼ cup cream
250g microwave rice packet
¼ cup cheese, grated
1 teaspoon paprika
1 teaspoon parsley
2 teaspoons garlic infused olive oil
salt and pepper to taste
Method
Dice chicken and add to a pan on high heat with 1 teaspoon of olive oil to brown.
Add grated broccoli, zucchini and cauliflower to the pan. Season with salt, pepper, paprika and parsley and drizzle with 1 teaspoon of olive oil and mix well then allow to brown, stirring as needed.
Add cottage cheese, cream and cheese to the pan and mix well. Add microwave rice and again mix well. Reduce heat and let simmer for 5 minutes, stirring as regularly as needed.
Add spinach to the pan and stir, letting it wilt into the mixture then serve.
Notes
Turn vegetarian by swapping chicken for mushrooms or tofu!
