Chicken + Mash Bake
Serves 4. Ready in 45 minutes.
Ingredients
300g chicken breast, diced
1 cup broccoli, grated
1 cup corn kernels
2 cups spinach
½ cup cottage cheese
2 tablespoons sour cream
3 medium potatoes
½ cup cheese, grated
2 tablespoons milk
1 teaspoon butter
2 teaspoons paprika
2 teaspoons basil
1 teaspoon parsley
1 teaspoon pepper
1 teaspoon garlic infused olive oil
Method
1. Preheat oven to 180 degrees. Prepare a deep baking dish.
2. Dice potatoes and add to a pot with water to boil and cook until tender. Take from heat and drain water. Add milk and butter then mash until smooth and set aside.
3. Heat olive oil in a pan on medium-high heat, add chicken, season with pepper and herbs, allow to brown. Add broccoli and corn kernels to the pan followed by cottage cheese and sour cream, combine well allowing the cottage cheese to melt. Reduce heat and let simmer for 5-10 minutes.
4. Place spinach into the baking dish. Pour the chicken mixture over the top and lightly mix. Scoop mash over the top then top with paprika and grated cheese. Bake in the oven for 30 minutes until golden on top then serve.
