Chicken and Pumpkin Couscous
Serves 4. Ready in 25 minutes.
Ingredients
300g chicken breast, diced
2 cups pumpkin, diced
1 red capsicum
1 zucchini
3 tablespoons flaked almonds
2 cups water
1 cup couscous
1 teaspoon chilli flakes
1 teaspoon parsley
1 teaspoon paprika
1 teaspoon garlic infused olive oil
Method
1. Heat olive oil in a pan on medium-high heat, add chicken and brown. Add diced pumpkin to the pan to soften and brown, stirring as needed.
2. Dice capsicum and zucchini, add to the pan. Season with chilli, parsley and paprika. Continue to stir for a further 2-3 minutes.
3. Add 1 cup of water to the pan and let simmer for 5 minutes. Add the remaining cup of water followed by the couscous to the pan, mix very well. Cover and turn off the heat for 7 minutes.
4. Uncover and stir the couscous with a fork, top with almonds then serve.
