Chicken Sushi Bowl

Serves 2. Ready in 5-25 minutes.

Ingredients

  • 250g chicken breast (can also swap for salmon)

  • 1 cup cucumber, diced

  • 1 avocado

  • 250g microwave brown rice tub

  • 1 teaspoon honey

  • 1 teaspoon garlic infused olive oil

  • 1 teaspoon soy sauce

  • 1 teaspoon mayonnaise

  • 1 teaspoon sesame seeds

  • 1 teaspoon chia seeds


Method 

1. In a bowl combine honey, olive oil and soy sauce. Dice chicken and place in bowl to marinate for minimum 15 minutes.

2. In a pan on medium-high heat, grill marinated chicken until cooked through, stirring as needed. Cook microwave rice according to packed instructions.

3. Dice avocado, then place with diced cucumber into bowls, followed by chicken and microwave rice once ready. Drizzle each bowl with mayonnaise then top with sesame and chia seeds. Serve.
