Tofu Noodle Stir Fry

Serves 4. Ready in 45 minutes.

Ingredients

  • 300g tofu block

  • 2 carrots

  • 4 broccolini florets and stems

  • 85g Instant noodles/2 minute noodles

  • ¼ cup soy sauce

  • 1 tablespoon honey

  • 1 tablespoon sesame seeds 

  • 1 teaspoon chilli flakes

  • 1 teaspoon garlic infused olive oil


Method 

1. Mix soy sauce, honey and chilli flakes in a bowl. Dice tofu and place in bowl to marinate for a minimum 30 mins.

2. Dice carrot and broccolini, set aside.

3. Heat olive oil in a pan on medium-high heat, add tofu and marinade to the pan and fry for 5-7 minutes, stirring regularly.

4. Add carrot and broccolini to the pan and cook for 2-3 minutes, stirring as needed.

5. Cook noodles as per packet instructions. Drain and add to the pan to combine, cooking for a further 2-3 minutes.

6. Serve into bowls and top with sesame seeds.
