Ham and Tomato Muffins

Makes 12 muffins. Ready in 45 mins

Ingredients

  • 1 cup flour

  • 1 cup LSA

  • 2 eggs

  • ¼ cup ham, diced

  • ½ cup spinach, diced

  • ½ cup tomatoes, diced

  • ½ cup cottage cheese

  • ¼ cup milk

  • ¼ cup cheese, grated

  • ½ cup avocado

  • 2 teaspoons baking powder

  • 1 teaspoon salt

Method 

  1. Preheat oven to 180 degrees. Prepare 2 muffin trays (for a total of 12 muffins) with olive oil.

  2. In a bowl mash the avocado. Add eggs to the bowl and whisk.

  3. Add in to the bowl cottage cheese, grated cheese, milk, spinach, tomatoes and ham, combine well. Add flour, LSA, baking powder and salt and mix until all of the mixture is well combined.

  4. Spoon the mixture into the prepared muffin trays. Bake on 180 degrees for 35-40 mins, until cooked through and golden on top.


Notes

Choose any flour you wish, I typically use spelt or a wholemeal flour but any will work!

LSA is amazing for adding extra nutrition to the muffins but you can also swap for a cup of flour.
