Creamy Pumpkin Spaghetti
Serves 4. Ready in 25 mins.
Ingredients
300g chicken breast
1 ½ cups diced pumpkin
1 cup spinach diced
1 cup cottage cheese
2 tablespoons sour cream
2 tablespoons pepitas
1 teaspoon chilli
1 teaspoon olive oil
Parsley, salt and pepper to taste
Spaghetti to serve with
Method
1. Heat olive oil in a pan over medium heat. Add chicken and brown.
2. Dice pumpkin and add to the air fryer for 8-10 minutes, stirring as needed.
2. Add air fried pumpkin, spinach, chilli, parsley, salt and pepper to the pan and stir regularly for 3 minutes.
3. Stir into the mixture the cottage cheese and sour cream. Reduce the heat and let simmer for 15 mins, stirring as needed.
4. Add pepitas and mix through then serve with spaghetti.
Notes
If no air fryer, you can roast pumpkin pieces in the oven or add to the pan to cook before adding in the other ingredients.
Make vegetarian by swapping chicken for tofu or extra cottage cheese.
Freeze the leftovers for lunches!
