Quiche Muffins

Makes 12. Ready in 25 minutes.

Ingredients

  • 6 eggs

  • ½ cup roma tomatoes

  • ¼ cup ham

  • ½ cup spinach

  • ½ cup cottage cheese

  • ½ cup grated cheese

  • 2 tablespoons milk

  • 4 multigrain wraps

  • 1 teaspoon olive oil

 

Method

1. Pre heat oven to 180 degrees.

2. Whisk eggs, milk, cheese and cottage cheese in a bowl.

3. Prepare two muffin trays with olive oil. Cut wraps into quarters and place in the tray to act as a base for each quiche.

4. Spoon the mixture into each wrap base.

5. Dice tomatoes, ham and spinach then place evenly across all twelve quiches.

6. Bake on 180 degrees for 30 minutes until cooked through and golden on top.


Notes

  • Meal prep these and freeze, reheating or defrosting once you are ready for them.

  • Have two for breakfast on the go, one as a snack or one-two with side salad for lunch or dinner.
