Granola

Makes 10 serves. Ready in 30 minutes.

Ingredients

  • 2 cups oats

  • ¼ cup almonds

  • ¼ cup cashews

  • ¼ cup pepitas

  • ¼ cup coconut flakes

  • ¼ cup sunflower seeds

  • 4 teaspoons chia seeds

  • 1 teaspoon salt

  • ¼ cup olive oil

  • ¼ cup rice malt syrup

  • ½ cup diced apricots

Method 

1. Preheat oven to 180 degrees. Lightly grease a baking dish and line with baking paper.

2. Combine oats, almonds, cashews, pepitas, sunflower seeds and coconut flakes in a bowl. Pour olive oil into the bowl and mix well. Repeat with rice malt syrup, pouring over mixture and stirring well to combine.

3. Spread the mixture evenly over the baking paper. Bake for 20 minutes, stirring every 5 mins.

4. Take from the oven and set aside in the baking dish to cool. Once cooled add the diced apricots, sprinkle with chia seeds and mix.

5. Store in an air tight container and use within 1 week or freeze then thaw once wanting to use.


Notes

Rice Malt Syrup can be swapped for Maple Syrup
