Potato Bake
Serves 4 as a side. Ready in 50 mins
Ingredients
4 washed potatoes, skin on
1 zucchini
½ cup spinach leaves
½ cup cottage cheese
¼ cup sour cream
¼ cup grated cheese
2 teaspoons parsley
1 teaspoon paprika
Olive oil
Method
1. Pre heat oven to 180 degrees. Prepare a medium baking dish with olive oil.
2. Slice potatoes and zucchini and place in a bowl. Add cottage cheese, sour cream, parsley and paprika to the bowl and mix well.
3. Add the bowl contents to the baking dish. Sprinkle grated cheese over the top. Place in oven to bake for 40 minutes until the top is golden and the potatoes are soft in the middle.
Notes
Potatoes can also be swapped for sweet potatoes or a mix of both!
For a creamier bake, add an extra 1/4 cup of sour cream.
