Tuna Patties

Makes 12. Ready in 30 minutes.

Ingredients

  • 190g canned tuna

  • 1 medium sweet potato

  • ½ cup broccoli

  • ¼ cup grated cheese

  • 2 eggs

  • 1 cup LSA

  • 1/4 cup cottage cheese

  • 1 teaspoon paprika

  • 1 teaspoon parsley

  • 1 teaspoon salt

  • 1 teaspoon chilli

  • 2 tablespoons flour

  • 2 teaspoons olive oil

Method

1. Dice sweet potato into small cubes, add to a saucepan, cover with water and boil until soft. Remove from heat and mash once cooked.

2. Grate broccoli and cheese then add to the saucepan along with tuna, LSA, cottage cheese, paprika, parsley, chilli and salt. Combine well.

3. Sprinkle flour over a bench or cutting board. Using hands, form the mixture into ten small balls then roll lightly in flour to coat, flattening the ball into a patty.

4. Add olive oil to a pan on medium heat and add patties. Cook for 8 minutes on each side, until golden on the outside.


Notes

  • Serve with sides such as brown rice, salads, grilled greens or roast vegetables.

  • Make into a burger with kaleslaw and avocado.

  • Add chilli flakes for more flavour or keep plain.

  • Perfect for kids also, either in a burger or all by themselves.

  • Completley freezable, just reheat when ready (try microwaving then adding to the air fryer!)
