Tuna Spread

Serves 2. Ready in 5 minutes.

Ingredients

  • 95g tuna can with olive oil x2

  • ½ cup spinach, sliced thin

  • ¼ cup cheese, grated

  • 2 tablespoons sour cream

  • 2 tablespoons plain Greek yoghurt

  • 2 teaspoons parsley

  • 125g corn kernels (optional - this does make it sweeter)

Method 

1.  Add all ingredients to a bowl and mix well.

2. Refrigerate and use for up to 3 days in an air tight container.
